Red Radicchio
Salad (Insalata di Radicchio Rosso) Recipe
Ingredients

1 large radicchio
head, shredded 1 onion, sliced

45 ml/3 tbsp olive
oil
-
1 garlic clove,
crushed
-
5 ml/1 tsp paprika
-
15 ml/1 tbsp
chopped fresh parsley
-
15 ml/1 tbsp snipped fresh
chives
Method:

Heat the oil in a saucepan. Add the onion and cook for 2 minutes.

Add the
radicchio and crushed garlic and cook for about 5
minutes until the radicchio is softened but not
brown.
-
Stir in the remaining ingredients
and cook for 2 minutes. Transfer to a warm serving
dish.
