Cheese, Egg, and Cream Based Recipes - Alpine Fresh Pasta

Ingredients                                                   

  • 350g/12 oz fresh tagliarini

  • 90 ml/6 tbsp olive oil

  • 1 red (bell) pepper, chopped

  • 1 green (bell) pepper, chopped

  • 4 spring onions (scallions), chopped

  • 100 g/4 oz/1 cup pine nuts, roughly crushed

  • 450 g/1 lb/2 cups cottage cheese

  • Salt and freshly ground black pepper

  • Lemon twists Cress


Method:

  1. Cook the tagliarini (according to the packet directions).

  2. Heat two-thirds of the oil in a saucepan. Add the peppers and onion and cook gently for 2 minutes.

  3. Add the remaining ingredients except the rest of the olive oil, the lemon twists and cress, and cook gently until hot through, stirring all the time.

  4. Toss the tagliarini in the remaining olive oil. Divide between serving plates.

  5. Spoon the cheese mixture over and garnish each with a lemon twist and a little cress.
