Starters Recipes - Cooling Stuffed Peaches

Ingredients

  • 50 g/2 oz fl/1/2 cup cooked long-grain rice

  • 175 g/6 oz/3/4 cup cottage cheese

  • 2 celery sticks, chopped

  • 1/2 small red (bell) pepper, finely chopped

  • 4 spring onions (scallions), finely chopped

  • Juice of 1/2 lemon

  • 30 ml/2 tbsp mayonnaise

  • 15 ml/1 tbsp sultanas (golden raisins)

  • Salt and freshly ground black pepper

  • 8 canned peach halves, drained

  • Lollo rosso leaves


Method:

  1. Mix the rice with all the ingredients except the peaches and salad leaves.

  2. Stir gently then pile the mixture on to the peach halves.

  3. Arrange on a bed of Lollo rosso leaves and chill until ready to serve.
