Ingredients

g/2 oz fl/1/2 cup cooked long-grain rice

g/6 oz/3/4 cup cottage cheese

celery sticks, chopped

small red (bell) pepper, finely chopped

spring onions (scallions), finely chopped

Juice of
1/2 lemon

30 ml/2 tbsp mayonnaise

tbsp sultanas (golden raisins)

and freshly ground black pepper

canned peach halves, drained

Lollo
rosso leaves
Method:

Mix the rice with all
the ingredients except the peaches and salad leaves.
-
Stir gently then pile the mixture on to the peach
halves.
-
Arrange on a bed of Lollo rosso leaves and chill until ready to serve.
