Starters Recipes - Eggs Italian-style

Ingredients

  • 175 g/6 oz green tagliatelle (verdi)

  • Knob of butter

  • 4 large tomatoes, skinned, seeded and chopped

  • A few torn fresh basil leaves

  • 2 eggs

  • 150 ml/2/3 cup single (light) cream

  • Salt and freshly ground black pepper


Method:

  1. Cook the pasta according to the packet directions. Drain and toss with the butter.

  2. Divide between 6 individual ovenproof dishes. Spoon the tomatoes over and scatter with the basil leaves.

  3. Beat the eggs and cream together with a little salt and pepper. Spoon over the tomatoes.

  4. Cover each dish with foil and bake at 160°C/325°F/gas mark 3 for 30 minutes or until the egg is set. Serve hot.
