Ingredients

175 g/6 oz green
tagliatelle (verdi)
-
Knob
of butter
-
4 large tomatoes,
skinned, seeded and chopped
-
A few torn fresh basil
leaves
-
2 eggs
-
150 ml/2/3 cup
single (light) cream
-
Salt and freshly
ground black pepper
Method:
-
Cook the pasta according to the packet directions.
Drain and toss with the butter.

Divide between 6
individual ovenproof dishes. Spoon the tomatoes over
and scatter with the basil leaves.

Beat the eggs
and cream together with a little salt and pepper.
Spoon over the tomatoes.

Cover each dish with foil
and bake at 160°C/325°F/gas mark 3 for 30 minutes or
until the egg is set. Serve hot.
