Recipes - Macaroni Cheese Omelet
Ingredients

100 g/4 oz/1
cup elbow macaroni

1
bunch of spring onions (scallions),
finely chopped

g/2 oz/1/4 cup butter
-
4
eggs
-
30
ml/2 tbsp milk

15
ml/1 tbsp Worcestershire sauce

100 g/4 oz Cheddar
cheese, grated

Salt and freshly ground black
pepper

tomatoes, sliced
Method:
-
Cook
the pasta according to the packet directions, drain.

Meanwhile, fry (sauté) the spring onions in the
butter for 4 minutes until soft and golden brown.

Beat the eggs with the milk, Worcestershire sauce
and half the cheese. Season and stir in the
macaroni.

Pour over the onions and cook, lifting and
stirring, until the base is golden and set.
-
Lay the
slices of tomato on top and sprinkle with the
remaining cheese.

Place under the grill (broiler)
until bubbling, golden brown and the egg is set.
Serve cut into wedges.
